The cuisine of vast sub-continent of India is mainly conditioned by its varied geography and cultural influence. Generally, the climate of north India is hot during summers and cold during winter especially in the states of Jammu & Kashmir, Himachal Pradesh, Uttarakhand, Haryana, Punjab, Uttar Pradesh, Bihar, Jharkhand, Chhattisgarh, Madhya Pradesh, Rajasthan and the National Capital Territory of Delhi. So, the cuisine of these north Indian states is more or less similar with little difference of the cultural influence. The dairy products are generally used in their cuisines that include milk, paneer, ghee and yoghurt as well as the common ingredients of chilies, saffron and nuts. The staple food of north Indian cuisine is variety of lentils, vegetables along with roti or paratha. People of North India also prefer to take meat, cheese (paneer), and mushroom. The popular dishes of north Indian cuisine are Biryani, Pulaos, Daal Makhani, Dahi Gosht, Butter Chicken, Chicken Tikka, Fish Amritsari, Chaat, Laddoo etc.
